RESTAURANT HEAD CHEF
French-born and recently appointed restaurant head chef of Silvester’s, Raphael Szurek, has always possessed a passion for food, having completed a Culinary Arts and Hospitality Management Degree and Bachelor of Hospitality and Restaurants Management at the Paul Bocuse Institute and Lyon 3 University in France.
Beginning his career in Paris in 2003, Raphael donned his chefs apron at the 3 Michelin Stars, Four Seasons Hotel George V before gaining further experience at 3 Michelin Stars, Le Grand Vefour and Fauchon.
In 2006, he moved to China where he took up a position as Junior Sous Chef at the Novotel Baiyun Airport, Guangzhou and a year later was appointed Senior Sous chef at a number of restaurants within The Ritz Carlton Guangzhou.
Raphael commenced his first restaurant head chef role at TWIST and LUTECE at the internationally recognised, Canton Tower in Guangzhou, China before moving to Vietnam for his most recent role as Chef of the awards winning French Grill restaurant at the JW Marriott Hanoi.
Raphael brings his international experience to Silvester’s, fostering a contemporary Australian menu with hints of multicultural flavour throughout.
